What I Eat in a Day

I love reading these and watching these whether its on someone’s YouTube Channel, TikTok, Instagram, or blog. So I’m making my own. I’m a creature of habit and often get fixated on the same meals for lengths at a time so this has been my Miami What I Eat in a Day.

6:00 am Coffee

Firs thing’s first. I’ve been rising early and heading straight to the Keurig, popping in a K-Cup before I even put my glasses on. Then it’s off to my morning workout. I prefer to workout fasted, it helps me get my appetite going for the day and I’m normally not hungry until around 10 am.

10:30am Breakfast: Smoothie and Protein Almond Milk

After a morning workout, I go for my newfound love of Protein Chocolate Almond Milk. I’m not a protein shake girl and I definitely struggle to get my protein in being Pescatarian Plant Based, but this little cup has 20g of plant based protein which is perfect to keep my full in addition to my smoothie bowl. As for my smoothie bowl, I have it down to a science; Blend 1c frozen mixed berries, handful of spinach, and 1 banana with a little water and top with honey.

1:00pm Snack: Tomatoes, Hummus, and an Apple

I have been at the beach or the pool for the majority of the day, so I have been bringing snacks I can travel with. This has included cherry tomatoes and those single hummus containers, and an apple to hit my sweet tooth. Can’t not finish with sweets.

4:00pm Lunch: Egg Whites and Veggie Scramble, and Frozen Grapes

After a long day in the sun I’m pretty hungry so I make a big sautee of peppers, spinach, onions, mushrooms, and egg whites. Obviously need something sweet and I have discovered my new addiction of frozen grapes. I have probably gone through a bag a day while I’ve been here. When I get home, I think I will be cutting down on so many servings of fruit a day and trying for more protein and veg.

7:30pm Dinner: Cauliflower Fried Rice

I absolutely love this meal. It’s so satisfying and filling and I have been looking forward to it every evening. I sautee broccoli, cauliflower rice, shredded broccoli stems, peas, peppers, onion, and spinach with egg whites (I’ve been making different meals out of the same few ingredients for simplicity and to spend as little money as possible at the grocery store while I’m here) or salmon. I add in soy sauce and voila! Dinner!

I have felt amazing eating this way and will continue to at home until I get truly, truly sick of it and find my next meal obsessions of the week. Hope you try some of them!
